Crispy Buffalo Chicken Salad

Ingredients:
Buffalo Ranch Dressing
1/3 cup mayo
1/4 Cup buttermilk (sub regular milk with lemon juice)
2 Tbsp Buffalo sauce (I use Frank’s Red hot)
1/4 cup chives
ranch seasoning (I use the Trader Joes one)
salt and pepper to taste
Chicken
2 chicken breasts
Buffalo sauce
1/4 Cup olive oil
Bread crumbs
1 egg
Salad
romaine lettuce, chopped
feta cheese
cherry tomatoes, halved
half of a red onion, sliced
tortilla strips
Instructions
Marinade Chicken
slice chicken breasts horizontally so that you have thin pieces of chicken. This will make cooking them easier and quicker.
Marinade chicken in buffalo sauce. You can do this while you make the dressing or prep it ahead of time and leave it in the freezer.
Buffalo Ranch
combine mayo, buttermilk, buffalo sauce, chives, and ranch seasoning into a container and blend with immersion blender. You can also use a food processor for this.
Add more buttermilk and salt until you reach your desired consistency and taste.
Cook the Chicken
In one bowl, combine egg and about a quarter cup of buffalo sauce.
In another bowl, pour out your bread crumbs
Dredge the chicken in bread crumbs, then buffalo mixture, then back in the bread crumbs and then place in heated pan with oil. Repeat this step for each piece of chicken.
Cook the chicken for about 3-4 minutes on each side
Assemble Salad
add your lettuce, and toppings to a bowl with chicken and dressing and enjoy!
