Sesame Ginger Steak Skewers & Fried Rice

Prep time: 20 Minutes Cook time: 20 Minutes Total time: 40 Minutes Servings: 5

Ingredients:

Peanut Sauce

  • 1/2 cup creamy peanut butter

  • 1/3 cup tamari/soy sauce

  • 2-3 tablespoons Thai red curry paste

  • 1 tablespoon chopped ginger

  • 1 tablespoon toasted sesame oil

Steak

  • 1/3 cup sweet Thai chili sauce

  • 1/3 cup tamari/soy sauce

  • 6 cloves garlic, chopped

  • 1 tablespoon fresh grated ginger

  • 2 tablespoons Gochujang

  • 2 pounds flank steak, cubed

  • limes, avocado, sesame seeds, and cilantro, for serving

Fried Rice

  • 1 cup white rice cooked, and chilled

  • green onion, chopped

  • 2 cloves garlic, chopped

  • 1 carrot, peeled and chopped

  • 1/4 cup soy sauce

  • 1 Tbsp sesame oil or butter

Instructions

Peanut Sauce

  1. To make the peanut sauce. Add all ingredients to a glass jar or blender and blend to combine, adding water as needed to thin the sauce.

Skewers

  1. In a bowl, mix the sweet Thai chili sauce, soy sauce, garlic, ginger, and chili paste. Add the beef and toss. Let sit for 10 minutes.

  2. Thread the beef onto the skewers.

  3. Grill the skewers until lightly charred, turning them occasionally throughout cooking, about 8 to 12 minutes total, depending on your desired doneness.

Fried Rice

  1. in a pan, heat up sesame oil. Add garlic and carrots and sauté until golden.

  2. add green onion and chilled rice. stir until fully incorporated and then add the soy sauce.

  3. serve with skewers, avocado, sesame seeds and peanut sauce. Save some peanut sauce on the side for dipping.
