Soyaki Tacos

Ingredients:
Slaw
2 cups coleslaw mix
2 Tbsp mayonnaise
red wine vinegar to taste
2 tsp sugar
Chicken
12 oz chicken breast
2/3 cup soyaki sauce (you can get this at Trader Joe’s)
1/3 cup water
The rest
1/4 cup soyaki sauce for dipping
10 small flour tortillas
shredded mozzarella cheese
Instructions
Make the chicken:
Add soyaki sauce, water and chicken to your insta pot and pressure cook for 6 minutes.
once chicken has cooked, remove and shred. If you have a KitchenAid mixer, you can use this to shred the chicken in seconds. Use the flat beater attachment for best results.
Make the slaw:
add slaw, mayo, sugar, and red wine vinegar to a bowl and combine. Adjust to taste and set aside.
Make tacos:
in a shallow bowl combine 4 Tbsp of water and half a cup of soyaki sauce.
Take a tortilla and drench in the mixture. Place in a pan over medium heat.
once the tortilla is slightly toasted on both sides, add some cheese to the top of the tortilla. Once the cheese has started to melt, add some shredded chicken.
Fold the tortilla over on itself so that it forms a taco and then let it crisp up a little more.
Complete steps 2-4 until all tortillas are used.
Once all tacos are cooked, add the slaw to each taco. Dip in soyaki sauce and enjoy!
