Thai Peanut Steak Noodles

Prep time: 15 Minutes Cook time: 25 Minutes Total time: 40 Minutes Servings: 4

Ingredients:

Thai Peanut Sauce

  • 1/2 cup peanut butter

  • 1/3 cup low sodium soy sauce

  • 1/4 cup sesame oil

  • 1/4 cup rice vinegar

  • 2 tablespoons sriracha

  • 2 tablespoons sugar

  • 1 teaspoon ground ginger

  • a clove of fresh garlic, peeled

  • 1/4 cup water to thin to desired consistency

Noodles

  • 1 pack spaghetti noodles

  • 12 ounces skirt steak

  • 1 Tbsp avocado oil

  • salt

  • pepper

Toppings

  • fresh cilantro, chopped

  • fresh mint, chopped

  • peanuts, chopped

  • green onion, chopped

Instructions

Make the sauce:

  1. add all ingredients to blender or bowl and blend together until fully combined. I use an immersion blender. Add warm water as needed to reach desired consistency. Set aside and prepare the rest of the bowls.

Make the steak and noodles:

  1. season steak with oil, salt and pepper on both sides. Add to grill and grill for about 2-3 minutes on each side depending on desired cook.

  2. While steak is grilling, cook noodles according to instructions on the package.

  3. add noodles to bowl and top with steak, mint, cilantro, green onion and drizzle with that peanut sauce. Enjoy!
